Mandarin Orange Cake

2 cups flour
2 cups sugar
2 eggs
2 small cans mandarin oranges (drained)
2 tsp baking soda
2 tsp vanilla
1 tsp salt

Topping:
1 cup brown sugar
4 TBSP butter
4 TBSP milk

Combine all ingredients together and beat for about 3 mins. Bake for 30 mins at 350F (don't underbake or middle might fall a little). The top will brown (carmelize) as it bakes, so no need to worry that its burning.

While cake is baking, mix together ingredients for topping on stovetop and bring to a boil. Spoon immediately over warm cake once out of the oven. Cool.

Serve cake with cool whip.
