Yesterday I put the following in a crockpot:
pork tenderloin (lemon garlic flavored)
the following veggies, chopped:
1 onion
3 celery stalks
9 mushrooms
3 medium carrots
2 potatoes
then
2 bay leaves
salt and pepper
1 tsp Italian seasoning
1 cup chicken broth mixed with 1-2 tsp tomato paste
I cooked it on high for about 6 hours.
I removed and carved the pork
I fished out all of the potatoes and mushrooms to serve on the side
The rest of the veggies and liquid I pureed in the blender to serve as a tasty sauce over the pork and potatoes/mushrooms
The pork was fall apart tender. Same with the potatoes. The sauce was extremely good. Very flavorful.
No oil. No butter. Nothing remotely fattening. Just tasty food.
