Taco Soup (weight watchers recipe)

1 lb. ground turkey
1 large onion, chopped
1 packet taco seasoning
1 packet hidden valley ranch dip mix
1 can each: pinto beans, chili hot beans, corn, stewed tomatoes and one can Mexican style stewed tomatoes (diced tomatoes work as well)
May also want sour cream, Mexican cheese, and Frito's.
Brown meat, drain fat, and add in chopped onion. Cook for a few minutes till onions begin looking clear. Add in taco seasoning, and ranch packets. Then, add in the five cans of beans, corn, and tomatoes. Simmer for 15-20 min. or until desired consistency is reached. Serve with a dollop of sour cream (fat free was good), a bit of Mexican cheese (2% was yummy), and some crushed up Frito's or corn chips.
This soup was YUMMY! My hubby made it last Monday and I've been wanting it again ever since. He added in Fiesta Ranch mix instead of regular ranch, and it was a little spicy for me. It was good, but too spicy. Jason thought it had too many beans, and next time wants me to add in less. It was fine for me. I'll definitely double it next time too... but maybe leave the beans at just one can. It's a keeper for us.
