Pumpkin Spiced Oatmeal

4 cups water
1 cup steel cut oats
1/4-1/2 cup pumpkin puree
1/2 cup milk
1 tsp vanilla extract
1/2 tsp pumpkin pie spice (or more to taste)
2-4 tbsp brown sugar (or more to taste)

Boil water, add oats and cook for 30 minutes over medium heat until oats are tender. Remove from heat, stir in pumpkin, milk, vanilla, spices and brown sugar. Adjust seasonings and brown sugar to taste.
