1 c. diced carrot
1 c. diced celery
1 green pepper diced
leftover spaghetti-meat sauce (I make my sauce with ground beef, crushed tomatoes, and Italian seasonings)
2 cans chicken broth
1 tsp. oregano
1 tsp. basil
pepperoni
In a soup pot add veggies, broth, and spices. Boil until the veggies are soft. Add the spaghetti sauce and pepperoni. Cook until heated through. Serve with Parmesan cheese on top. (I think this would also be delicious with mushrooms and onions, but dh is picky - so I left them out).
