Pizza Crust

Mix:
1/4 cup warm water (105 to 115 F - basically hot water out of the tap)
1 tsp honey
1 pkg or 2 1/4 tsp yeast

While the yeast activates, in a separate bowl mix:
3 cups flour
1 tsp salt
1 tbsp oil
3/4 cup warm water

When the yeast mixture is foamy (~5 min), add the yeast mixture to the rest of the ingredients. Mix with a fork, then knead 3-4 min. If sticky, coat your hands with olive oil. I do this every time.
Allow to rise covered with wet towel for 30 min (I usually do this in a warm oven with the door cracked, 100-175 F)
Cut into 4 portions. Knead each portion again just by folding the dough under itself 4 or 5 times. Let rest for 10-20 min, or however long it takes you to prepare your toppings.
Top anyway you like
Roll out crust on parchment paper using hands or rolling pin, trimming excess paper before baking (or it will burn).
Bake in a 500 F oven until golden brown.

Parchment paper is a must. Or bake directly on pizza stone.

I make this all the time, including tonight, and it's so easy and amazingly good.
