Marinated Tomatoes

5 large ripe tomatoes - chopped
1/4 c. olive oil
1 1/2 Tbsp lemon juice (I use bottled, but I'm sure fresh is better)
1 clove minced garlic
1/2 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper

Mix together and marinate in fridge. The longer they marinate, the more flavor they have. I especially love them on top of wheat thins or whole-wheat crackers.
